Pilafi

Pilafi is another must-taste of Chania’s gastronomic tradition. One finds it in every wedding taking place in the wider Western Crete region, aka gamopílafo, the wedding rice in the Cretan idiom. Piláfi is a delicious traditional recipe for rice cooked in meat broth from a yearling lamb, kid, or hen. Salt and pepper are added to the stew which is then left to simmer until the liquid is absorbed by the rice.

It is then placed in a pot full of butter made of stàka (you should try this one alone with fried eggs..oh my) & just before it’s done some lemon juice is added. The piláfi is served without the meat, seasoned with extra pepper, extra lemon, and some Greek yogurt. It is a staple food and it’s quite understandable since it is absolutely divine.
