Kohupiim. What about cheese you’ll ask. Good question that. Tallinn naturally has its own answer. It is called kohupiim cheese. What is it? It is basically a kind of sweet creamy cottage cheese used as a base for many koogid (cakes).  Cottage cheese is always great in salads, accompanied by fresh vegetables or sweet fruit and omnipresent in Baltic countries berries.

Where you should also ask, where should you go in order to sample this capricious (sorry for that) spécialité? Well, we have just the place. A place of exquisite ambiance that specialized in cheese production.  Raemeierei is 250 seat restaurant and cheese factory in Tallinn Old Town with a unique industrial concept. The cuisine is European with a twist of modern Estonian touch.
