Kohupiim. What about cheese you’ll ask. Good question that. Tallinn naturally has its own answer. It is called kohupiim cheese. What is it? It is basically a kind of sweet creamy cottage cheese used as a base for many koogid (cakes).  Cottage cheese is always great in salads, accompanied by fresh vegetables or sweet fruit and omnipresent in Baltic countries berries.
