Frittelle di riso

Frittelle di riso aka San Giuseppe pancakes. Rice boiled in water, orange peel, a pinch of salt, a certain amount of icing sugar that are cooked and left to rest for a day or two. When the mixture is ready and flavored, the dough is shaped in what in dialect is called “piccia”, a sort of wheel from which they are then manually detached one by one by the customer after they are fried in extra virgin olive oil. No fillings, although many prepare them with chocolate or cream.
