Pollo al ajillo
Pollo al ajillo. Garlic chicken or garlic game (bird). Chicken parts dipped in garlic sauce and fried until golden on the outside and tender on the inside. A few minutes before serving we let the chicken simmer in a bit of white wine, thyme and rosemary. Then we devour it. It takes all sorts of pairs, from potatoes, to salad and mushrooms. You decide.
