Gazpacho  is the traditional Andalusian tomato-based cold soup of Seville, especially popular in the summer as a snack or starter. It is smooth and pink and consists of tomatoes, cucumbers, green peppers, onions, garlic and olive oil with a bit of vinegar.

They are mixed in the bender until the texture is totally smooth and then served cold garnished with a bit of fresh basil. You can also try Salmorejo, a thicker variation from the nearby city of Córdoba. For one of the best you can find in Sevilla try the Bloody Gazpacho at El Pinton. This place is simply all you need for your whole Seville experience to be on top of your city breaks.
