Sarde in cipollata

Sarde in cipollata. An exquisite dish based on sardines, onions, and vinegar, with very ancient origins, widespread in all regions of Southern Italy. Back in the old days, it was not so easy to find and buy fish every day,  nor was it easy to preserve it without refrigeration.

This dish was created to preserve sardines for several days. The fish, absorbed the vinegar, an excellent acid preservative and was preserved up to four days in the winter and up to a couple of days in the summer. The sardines in onion are an excellent dish that can be served as an appetizer or as a main course.
