Chlodnik

Chlodnik is another popular soup found in many Eastern as well as Central European countries where is also known as Borscht. This is a soup based on red beetroot, onions, carrots & celery. Sour cream & soured milk or yogurt are added to the mix giving it a creamy texture and a rich pink color. Hard-boiled eggs, radishes & cucumbers are also added to the soup which is flavored with generous amounts of garlic and dill. Barszcz is a variant of this soup that includes bacon giving it a distinctive smoky taste.

Its strictly vegetarian version is traditionally served with ravioli-type dumplings called uszka (little ears) and/or sauerkraut every Christmas Eve.
