Esqueixada

Esqueixada is another typical Catalunya salad that contains raw cod, desalted in water & cut in little pieces, which is actually the meaning of the word exqueixar . The cod is mixed with tomatoes, onions & peppers & seasoned with minced garlic. It is usually dressed with oil & vinegar & sometimes garnished with a few olives or hard-boiled eggs.
