Trippa Senese
Trippa Senese. Tripe is the part of the stomach usually from cattle or sheep that one can find cooked in hundreds of different ways around the globe. This traditional Sienese recipe is made with tripe, sage, garlic, thyme, orange juice, hot peppers, extra virgin olive oil, white wine, salt and pepper. The tripe is sauteed and simmered in a wine before they are caramelized in water and sugar. They are then left in a low fire with some orange juice before they are served along with some finely chopped radicchio, thyme, and red cabbage.
