Sfincioni di riso. Catania rice crepes, also known as “zeppole di riso”, are one of the many versions of pancakes ( sfinci or sfince in Sicilian) that are typical in eastern Sicily. Invented by the nuns of the Benedictine Monastery of Catania in the 16th century and for this reason also called “crespelle di riso uso benedettini” or “benedettine”.
These delicious rice pancakes flavored with orange and sprinkled with honey were among the many desserts that are prepared for the Feast of St. Joseph on March 19. Today, due to their goodness and simplicity of preparation, rice crepes are widespread all year round and almost inevitable at the end of any Sunday or festive meal.
