Garbure
Garbure is a traditional Bordeaux soup consisting of cabbage & a series of other vegetables that can vary from beans, potatoes & turnips to onions, carrots & lettuce to basically anything a household can provide. It also contains ham or lamb or sometimes duck legs & cheese.
Garbure was a daily meal of Gascone peasantry that used whatever could be provided & ended the meal with a traditional chabrot which meant that after they had consumed the solid contents of the soup they mixed its last remaining liquid with a glass of red wine before finishing it.
