Manzanilla
Manzanilla is a light, dry sherry. According to manzanilla.org, it is difficult to determine the specific moment when Manzanilla was first produced and enjoyed. It is clear that it is the result of an ancient wine-making tradition, but it was not until 1964 that the Denomination of Origin was officially established.
It is a wine, made from the grape variety Palomino Fino, from the Andalusian region of Sanlúcar de Barrameda. It reaches an excellent maturation in this region thanks to the exceptional climate of the area and its cultivation in fields of albariza soil. like its sherries, is made using the traditional solera and criadera system. A genuine dynamic aging method from this region is based on the blending of wines of different ages.
Undoubtedly a treasure of oenological practice and the key factor in the genuine personality of Manzanilla. A yeast mantle that interacts with the wine during its aging and that in Sanlúcar, due to its climatic conditions, situated at the mouth of the river Guadalquivir, gives this sherry wine its distinctive composition. Manzanilla pairs perfectly with seafood, especially sushi, cured meat, salads and cold Andalusian soups.
