Alioli

Alioli. The Spanish garlic mayonnaise Alioli originated in Catalunya & became popular all over Spain. It is a quick & easy flavourful mixture of all (garlic) and oli (oil) whipped with egg yolk. The result is a creamy sauce of several variations savored with bread, fish, meat, vegetables…well everything really. The traditional version of this sauce did not have egg yolks but the yolks made the mixture easier to whip. If you enjoy spicy sauces you can spice up Alioli with a seasoning of cayenne pepper.

The food here is so good that is very doubtful you’ll stick just to Alioli.
