Berliner Luft Dessert is an old traditional dessert, which has an almost airy consistency, hence its name (Luft = air ). Gelatine soaked in cold water. Fresh eggs. Cream egg yolk with sugar. Finely grated lemon zest. Warmed up apple juice. The gelatine is mixed with the apple juice. It is then left to cool. The mix is stirred into the egg yolk and then placed in the refrigerator for 45 minutes until the cream is slightly firm. Vanilla sugar.Raspberries for decoration. All set. The mousse dessert cream, is a true Berliner tradition.
